When you begin your day with a really good cup of coffee, the rest of your day goes by more pleasantly than with a lesser brew.

This is how this company came to be.

Years ago my wife was preparing my daily thermos of coffee for me to take with me to work. To save time spooning sugar into the thermos she decided to use a measuring cup. She told me she had measured the spooning at almost a third of a cup of sugar! X 5 days /week, X 52 weeks = 120 cups of sugar per year! Yikes! Even back then I was aware of my ‘battle with the bulge’, so I told her to send me to work drinking black coffee.

What a rude taste awakening!

I had used cream and sugar for so long that I had forgotten that I used them to hide the taste of the coffee itself! Thus began my search for truly fine tasting coffee, giving up coffee was not an option; I needed that aroma and flavour.

After testing all of the name brand coffees available to me I began looking in gourmet shops, I found one called the Governor’s Table that carried true varietals of coffee beans! I purchased a fresh ground quantity of Columbian Supremo (the Juan Valdez commercials were not yet thought of). When I got home I brewed my very first pot of truly fine coffee. I was in heaven. However, as we approached the middle of the bag of grounds I noticed the flavour diminishing rapidly.

Immediately I determined the freshness of the grind was the culprit. I purchased a coffee mill, (burr grinder type) and began grinding my coffee freshly for each brewing. I was back in heaven. Soon I discovered the same dulling of flavour effect with my beans. The more time passed since roasting, the duller the flavour. I tried various, different containment with some success using air tight containers. I decided the freshness of the roasting also made a difference I then added refrigeration, then, I graduated to freezing the beans which also prolonged the freshness. (note: I also discovered that bring the beans to room temperature before grinding was optimal to prevent condensation from gumming up the grinder.)

Disaster struck, the source retailer of my favourite types of beans closed its doors. I was back to searching specialty shops. While all of my fumbling research in pursuit a better cup of coffee was taking place, the internet was in its infancy. As time passed I was able to search for retailers of fine coffee beans online. I eventually found a source of fine coffee beans. They did not ship into Canada because of shipping costs! My preference for fine coffee justified my actions, so I found a way around that and once again my source of good coffee was assured.

Meanwhile my passion for good coffee began to spread to my friends and relations. I began ordering coffee beans for others. Then, requests from friends who love fine tea. All too soon it became lots of others and lots of orders. Many raised the question of my going into the coffee business. I did more research and found ways to do just that. As a result, thanks to the encouragement and support of many friends, here I am, in business, selling fine coffee beans and teas at affordable prices to people who love fine coffee as much as I do.
